Tomato Vinaigrette

Tomato Vinaigrette is an easy delicious vinaigrette (salad dressing) made with fresh tomatoes.  We try as best we can to make good use of every vegetable we plant in our garden.  Although this vinaigrette was made with store bought tomatoes, it will definitely be made with home grown as soon as they ripen.  Can you tell I’m chomping at the bit for our garden to produce?

I don’t like waiting until the garden is in full swing to figure out what I’m going to do with our bounty. I like trying out recipes ahead of time just as a little tease as to what we’re going to enjoy in the summer.

You can make this delicious vinaigrette with regular tomatoes or Roma tomatoes. Either one will give you a fantastic flavorful vinaigrette.  The difference in the two tomatoes would be …the Roma’s will give you more meat and less seeds than a regular tomato.   But as I said, either one will be just fine.

Making a homemade vinaigrette literally takes just minutes to make when all the ingredients are measured out and ready.  Getting the flavor we need from the tomatoes to add to the vinaigrette is easy. Just cut the tomatoes in pieces and put them in a wire mesh strainer with a bowl underneath it..  Using the back of a tablespoon , press on the tomatoes until all the juice and meat goes through the strainer and into the bowl underneath it.

Place the rest of the marinade ingredients into the bowl, minus the olive oil. Whisk to combine them well.  Add the olive oil to the bowl while you whisk, in a slow steady stream.  Now taste it, tweak it , make it your own or use it as made.  There you have it, a fresh, delicious homemade Tomato Vinaigrette.

The salad I made for the Tomato Vinaigrette was pretty much what I would call a deconstructed BLT.  I made homemade bacon bits and croutons, laid them on a bed of lettuce and placed shavings of Parmesan Cheese on top.  Then I mixed and poured the Tomato Vinaigrette over it all. DELICIOUS!!!   Tomato Vinaigrette, it’s what’s for dinner, Enjoy!

You need half a pound of those juicy gems to make this dressing. My favorite part is squeezing them over a strainer — you end up with a pool of the finest, freshest tomato juice. With the regular accompaniments of a great vinaigrette — Dijon, garlic, vinegar, and olive oil — this stunning dressing becomes my summer salad’s best friend. It can also make for a quick dinner when tossed with cooked pasta, or a delicious dipping sauce for bread.


  • 2 ripe tomatoes, roma or regular (Roma will give you more tomato meat and less seeds)
  • 1 shallot,finely chopped
  • 3 Tablespoons olive oil
  • 2 Tablespoons red wine vinegar
  • 1/2 Teaspoon minced garlic
  • 1 Teaspoon salt
  • 1 Teaspoon sugar


  • Cut the tomatoes into pieces and place them into a mesh strainer with a bowl underneath it.. Using the back of a tablespoon press on the tomatoes until all that’s left in the strainer are the skins of the tomatoes. Discard the skins.

    To the bowl of tomato juice and bits add the chopped shallots, red wine vinegar, garlic salt and sugar. Whisk to combine.  Pour the olive oil into the bowl in a slow steady stream while whisking.  Whisk until all ingredients are well combined. Serve immediately or cover and refrigerate for later. If using later, give it a good whisk before serving.
