Making a delicious dinner from leftovers just thrills me to no end. My husband grilled a sirloin steak for dinner one night this week. The leftovers , which would have been enough for one serving, was cut thinly on the bias and set atop vegetables from the garden.
I had my gorgeous dinner salad ready, the only component missing was the dressing. We love steak and chicken grilled with mustard marinades, which made me think ,why not a salad dressing made with mustard? Why not indeed!

I’ll be asking my husband to grill extra chicken breast so we can enjoy this homemade vinaigrette on top of our garden fresh vegetables for as long as they last. - 1 heaping Tablespoon Dijon Mustard
- 2 Tablespoons fresh lemon juice
- 5 Tablespoons extra virgin oil oil
- 1/2 Teaspoon salt
- 1 Teaspoon freshly ground black pepper
Place all the ingredients in a medium bowl, whisk until well incorporated. Store any unused dressing in the refrigerator covered.
