Chicken Salad Melt Sandwich
I absolutely love messing around with sandwiches trying to come up with something just a tad different to feed my husband for lunch. Last weekend he was working in the garden getting it ready to plant. This particular day I had just made a batch of chicken salad from a rotisserie chicken in the fridge.
When it came time to make lunch, for some odd reason my mind went back to lunch time at the restaurant I worked at when I lived in Pennsylvania. One of our most popular lunchtime sandwiches was a Tuna Melt. Why I was thinking tuna salad instead of chicken salad is beyond me. But then I started thinking… why can’t I switch the tuna salad for chicken salad and make a Chicken Salad Melt Sandwich? I couldn’t think of a good reason why I couldn’t, so I did it. It was absolutely delicious and my husband loved it! So now the question is…why couldn’t I do it with ham salad? Melted cheese, ham salad…that’s another lunchtime creation waiting to happen. Ingredients
- 2 slices bread, whole wheat or white
- 1/3 cup chicken salad
- 1/4 cup cheese of your choice, grated
- 2 Tablespoons melted butter
- 2 slices tomato
- 1 large leaf lettuce
Instructions

Melt 2 Tablespoons of butter.

Brush the butter onto one side of each slice of bread.

Heat a saute pan under low heat.

Place both slices of bread, butter side down, into the pan.

Divide the 1/4 cup of grated cheese between the 2 slices of bread evenly.

Cook the bread until it’s toasted to golden brown and the cheese has melted.

Remove the bread slices from the pan.

Divide the 1/3 cup (more if desired) chicken salad between both slices evenly.

Place lettuce and tomato on one slice of bread on top of the chicken salad, top with the other slice of bread.

Cut in half to serve.
