Apple Pie Muffins

Apple Pie Muffins are soft, moist, apple muffins filled with apples and topped with a delicious crumb topping made of brown sugar, flour, cinnamon, and melted butter.

All I can say is WOW!  These are amazing Apple Pie Muffins! It’s been quite a while since I made muffins, especially apple muffins.  I had 2 very nice Gala Apples (baking and eating apples) in the fruit bowl. I debated whether I wanted to just eat them, or if I wanted to use them to make apple muffins.  These moist delicious muffins won out. Who could turn down a chance for Apple Pie Muffins!?

These are perfect Apple Pie Muffins.  I had one while it was still warm and another after it cooled down, just so I could tell you …they are amazing any way you want to eat them! The recipe yielded 16 regular muffins and the topping was enough to give them all a generous covering.   These are perfect kids, it doesn’t get any better than this!  We’re going to make Apple Pie Muffins together so you can see just how easy they are to make.

 Every muffin recipe I’ve ever made starts out by placing the dry muffin ingredients in one bowl and the wet muffin ingredients in another bowl.  Each bowl of ingredients is stirred in their separate bowls to mix the ingredients so that when they are combined together there is less stirring. The two bowls are combined and mixed together by stirring just long enough for the two sets of ingredients to be combined well without over stirring. Over stirring will create gluten, gluten makes baked goods tough. We don’t want tough muffins.

Place the dry Apple Pie Muffin ingredients into a large bowl.

Dry Ingredients:

  • 2 1/4 cups all-purpose flour

  • 1 Teaspoon baking soda

  • 1/2 Teaspoon salt

Stir the ingredients in the bowl to combine them and set the bowl aside.

Place the wet muffin ingredients into a separate medium-size bowl.

Wet Muffin Ingredients:

  • 1 egg room temperature

  • 1 cup buttermilk (room temperature)

  • 1/2 cup melted butter (cooled to room temperature)

  • 1 Teaspoon vanilla 

  • 1 1/2 cups brown sugar

Stir the wet ingredients together until the brown sugar is dissolved and not laying on the bottom of the bowl. 

Ok, first we’re going to talk about why some of the wet ingredients have to be room temperature.  If the egg and buttermilk were cold from the refrigerator and added to the melted butter it would seize up or solidify the butter and it wouldn’t mix into the other ingredients the way it should.  Second, why is the brown sugar considered a wet ingredient?  The brown sugar is almost always considered a wet ingredient when baking because it needs the wet ingredients to dissolve and incorporate into the other ingredients.

Next, we’re going to stir the wet and dry ingredients together until they are blended together. Just blended together ok, remember the longer you stir the more gluten you produce. Add the chopped apples (make sure you are using a baking apple) to the bowl and stir to incorporate them evenly into the batter.

Line your muffin tins with paper liners and scoop the muffin batter into the liners to fill them to the top. Yes to the top, not 3/4 full, not half full.  Fill the liners to the top. Set the pan aside, we’re going to make the topping.

Place the dry muffin topping ingredients into a medium-size bowl minus the 2 Tablespoons of melted butter.

  • 1/2 cup packed brown sugar

  • 1/3 cup all-purpose flour

  • 1 Teaspoon cinnamon

Stir to combine the ingredients.

Drizzle in the two Tablespoons of melted butter over the topping ingredients in the bowl while tossing the ingredients with a fork until everything is well blended.

Sprinkle the muffin batter with the topping. Bake the muffins in a preheated 375-degree oven for 25 minutes or until the tops of the muffins spring back when lightly pressed.

Muffin Batter

  • 2 1/4 cups flour
  • 1 Teaspoon baking soda
  • 1/2 Teaspoon salt
  • 1 egg, room temperature
  • 1 cup buttermilk
  • 1/2 cup butter, melted
  • 1 Teaspoon vanilla
  • 1 1/2 cups packed brown sugar
  • 2 cups diced baking apples


  • Preheat the oven to 375 degrees. Grease a 12 cup muffin tin or line the tin with paper liners.

    Place the flour, baking soda and salt into a large bowl, stir with a fork or whisk the ingredients to combine them.

    Place the egg, buttermilk, 1/2 cup melted butter, vanilla and 1 1/2 cups brown sugar in a medium bowl. Stir the ingredients together until the sugar is dissolved and not laying on the bottom of the bowl.

    Pour the buttermilk mixture into the flour mixture and sprinkle the diced apples into the bowl. Stir just until the mixture is blended .

    Spoon the batter into the muffin tins, filling the cups to the top.  Sprinkle the top of each muffin with muffin topping.  Bake at 375 degrees for 25 minutes in a preheated oven or until the tops of the muffins spring back when lightly pressed.  Remove from the oven to a wire rack to cool.

Topping Directions:

  • Place 1/2 cup brown sugar, 1/3 cup flour and 1 Teaspoon of cinnamon in a small bowl. Stir the ingredients to combine them. Drizzle 2 Tablespoons of melted butter while tossing the ingredients with a fork until well blended. Sprinkle the topping over the muffin batter in the pan. Bake according to recipe directions.
